How to Make Coffee Pancakes- Instructions

  1. In a large bowl, add all the dry ingredients together and mix them well. If you are using a pancake premix then simply pour the dry mix into a bowl. Use a smaller bowl if you are making a pancake recipe for one. 
  1. Pour 2 tablespoons of OK Caramel instant coffee of your choice with 2 tablespoons of boiling water and mix them well.
  1. In a medium bowl, beat the egg with milk/buttermilk, instant coffee mix, and melted butter. You can substitute the above ingredients with the choices described above. 
  1. Now pour this wet mixture into the dry mix right in the middle and then pour on the outer edges. Use a spatula to mix all these ingredients well together and whisk the mixture until it acquires a smooth texture. 
  1. Heat a cast iron skillet or a non-stick large pan to medium-high heat. Pour a small bit of butter or vegetable oil to grease the pan sufficiently. Note that vegetable or nut oil will be less smoky than butter.
