Dulce de leche is a thick milk-based creamy, and sweet sauce with a caramel-like lovely brown color. It has a mellow taste with a sweet and toffee-like flavor. It is a versatile sauce that is used as spreads on toast, for layering on cakes, to drizzle over ice creams, and mix with coffee beverages like Latte. Dulce de Leche recipe has different variations based on countries, type of milk used, and preparation methods. Classic Dulce de Leche recipe requires milk and a few ingredients to prepare while condensed milk-based Dulce de Leche recipe requires only the former ingredient. Dulce de Leche recipe like all things good takes time to prepare. Let's jump to the classic Dulce de Leche recipe first. 

 

 A. Classic Dulce De Leche Recipe  Ingredients  

1-liter milk

300 gm brown sugar

¼ teaspoon baking soda

1 teaspoon vanilla

 

Instructions

  1. Pour the milk into a saucepan and add sugar and baking soda to the mix.
  1. After the milk starts boiling, reduce the heat to low.
  1. Do not cover the pan, and let the concoction simmer at low heat and stir occasionally. 
  1. After an hour, stir the concoction frequently so it does not burn. 
  1. Remove the pan from the heat after another 30 to 45 minutes depending on the thickness and browning you require.
  1. Add and stir the vanilla and allow the prepared Dulce de Leche to cool.

 

 B. Dulce de Leche Recipe with Unopened Condensed Milk Can

Ingredients

 

1 can of sweetened condensed milk

 

Instructions

  1. Fill a deep-bottomed pan with water and place the condensed milk can after removing its label on its side in the pot.
  1. Check that the water level is at least 5 centimeters above the can. 
  1. Put the pan on high heat first and bring it to a boil. Then reduce the heat to simmer. 
  1. Add water regularly during the preparation time so that the water level remains the same. This ensures that the can does not spill or explode during cooking. 
  1. Remove the pan from the heat after 2 hours if you want your Dulce de Leche to be a light golden color and around 3 hours if you want a darker brown color. 
  1. Next, taking full precautions, remove the can from the heated pan and let it come down to room temperature. Do not, in any case, try to open the can while hot. The superheated material inside the can may spray violently leading to scalding and serious burns. 

 C. Dulce de Leche Recipe with Milk and Condensed Milk

 

Ingredients

 1 can condensed milk

 50 gm butter, unsalted

 50 gm granulated brown sugar

 6 tablespoons whole milk

 A pinch of salt

 

Instructions

 

  1. Add the sugar to a pan and melt it at medium heat. Instead of stirring, tilt the pan so that the caramelized sugar forms a layer.

  1. Next, add butter and mix it with sugar carefully as it will bubble.

  1. Now slowly add the milk bit by bit and stir continuously at the same time. 

  2. Next, pour the condensed milk from the can and stir and mix it well. 

  1. Keep stirring at medium heat for anywhere between 15 to 35 minutes depending on the color and thickness required. 

  1. Check its thickness by running the spatula between the pan. If the Dulce de Leche separates cleanly in the middle and is not runny then add a pinch of salt and stir again.

  1. Remove the pot and let the Dulce de Leche cool and then store it for future use.
